Honey Roasted Veggies

Honey Roasted Veggies (adapted from All Recipes.com)
  •  1 pound red potatoes, cut to bite size pieces
  • 1-2 c. baby carrots, cut to bite size pieces
  • 2 tablespoons diced onion (can use dry)
  • 2 tablespoons butter, melted
  • 2 tablespoon honey
  • 1.5 teaspoon dry mustard
  • Sprinkle of salt and pepper
Preheat oven to 375 degrees. Place potatoes and carrots in large casserole dish, and top with onion. In a small bowl, combine melted butter, honey, and mustard; drizzle over potatoes and onion.  Sprinkle veggies with salt and pepper, stir until well coated, then spread the veggies back out to fill pan.
Bake in the preheated 375 degrees F (190 degrees C) oven for 20 minutes, stir, and then bake another 20 minutes or until tender.
